Exhaust help

I looked under my 88 5.0 bird today and I saw what appears to be 3 cataytlic converters?.  there are 2 small ones at the bottom of the engine where the 2 manifold pipes tie together and then there is another cat just before the pipes split into duals and then into my 2 lers?.  Whats the deal?.  I want to do away with the one Cat and then run some flowmasters.  Anyone ever cut the lers off and just ran the exhaust through the Cats?, does it sound really bad or OK?.  This would just be untill I get my new lers put on in a few weeks.  I won't do it if it's gonna sound nasty or way to loud.  I want the car to stay driveable

The small ones are "pre-cats". Their job is to help the main cat get up to operating temperature faster.

I have an 88 Sport and I took off the exhaust from the cats back due to it starting to rot. I didn't want something to fall off and damage the underside. It might be a little loud for some people, but the 3 cats keep it quiet unless you really get on it. Going down the road 60-70 it just sounds sweet. I plan to put on shorties with an H pipe then flowmaster out the back, but for now due to short funds, I am fine as is.
