I'm running 275/50-15s on the back of mine and have no clearance issues at all. 60 series would be a little taller but you should be ok. They'll bulge a little on a 7" wheel but it won't be as bad as with a 50 series like mine. And mine isn't bad at all.

I had some BFG 265-65-15 on turbines on the back of my white car the summer of 2005. First off, they are too  wide...really mushy and twitchy. Second, when it was wet out...was really dangerous.
Third...on rutted up highways, like interstates, it made the car realllllly twitchy. Looked good, handled like ass. I'd NOT recommend that wide of a tire on a 7 inch wide wheel. Your call though.
I about wrecked mine several times on my gravel roads, just so  squirrely with those wide tires. For the record, I had the T/A tires...

I run a 275/60/15 on my 10holes except winter time. Mine may only last this year yet because they are worn so I have a problem getting traction on a wet road. My clearance issue was because I had too much trailer tongue weight and quad shock issues (none to very little clearance) because of having a mustang rear. I have not had a problem in handling except on some wet roads, partly due to going too fast for conditions.
