Personally, I'd go with the stock t-bird until you wreck it, then get a pos with a decent motor, like an 80's caprice 350, blow that thing up and then start playing around with the mustang or get something like an 80's mustang so you can learn how to tune properly.  My first car was a 93 integra, great car, good for street racing, safe for getting airborne and crashing at 80mph in.  That car was 130 something horse and the only mod I did was the ricey "powered by Acura" seat belt covers and that car was fast enough.  A turbo motor is a little different than an n/a motor and I would first get used to it, and then move on either to another motor if speed is you passion or a few simple boltons.  I had great plans for my first car, but the money went into stuff like oil changes, tires, spark plugs and all sorts of maintainence .  And making a car fast doesn't consist of just the motor, you have to consider shocks, struts, rear gears, tires and wheels, weigh and all kinds of other things that will be affected by modifying you vehicle, especially one with higher miles.

Sometimes money is an issue, and a 1969 anything is out of most peoples financial range, especially when you are a looking for a cheap first car.  If I had a choice, I would have went with a saleen S7 as my first car, but I am piss poor and the only thing my parents were willing to give me was a nice 87 voyager, gray with red interior.  I took option B; I saved up for two years and got a cheap car I didn't mind wrecking that got good gas mileage.  And just b/c you dont get in an accident with someone or something doesn't mean someone else won't get into one with you.  Most people out there suck at driving and shiznit happens, examples; deer, drunk drivers, stupid kids in civics, old ladies in crown vics, and other random acts of God.

get a car you want to work on, make nice, get a 300 dollar civic, geo or cavalier, drive the beater everyday to school, work, and to the gf's. on nice summer days, drive the car you are working on, take it to shows, or to cruise in. you will learn a ton about the car you like the most, and it won't get ruined cause some jack ass girl at school pulled out in front of you talking on her cell phone
