Thermostat

Well i found a cause to some of my troubles, Thermostat isn't working correctly. (appears to be factory original? Gasket sure is)

What should i replace it with?
Is 195 the stock?
Or should i try for a 180 or something?

Keep in mind i'm running a 3.8 stock, not the 5.0.

Stick with stock unless you want to get piss poor mileage. Think about this. The ECU thinks that 195 is normal so unless you have tuner or some way to make it think that it is the right temp. The ECU will bump extra gas like on cold start up to get it up to temp. Now if you have 180 stat will most likely won't see the normal temp range so DUMPIN  in more fuel to warm it up.
