I believe the T-56 has an integral bellhousing (somebody step in if I'm wrong), so one would need to either find/make an adapter plate and deal with spacing issues or cut the existing bell housing and weld (or otherwise permanently attach) the adapter plate to the amputee.  BTW, I think the T-56 is about 100lb heavier than a T-5.

If you're looking for 6-speed functionality for a stock motor, you might consider the 928 configuration and look into something like this

That would make for kick-ass weight distribution if you're wanting a fleet-footed fox.  (add some inboard brakes to the ensuing IRS to be totally trick)

Of course, it would probably be easier to swap in the engine and trans from a donor.

If you can graft a Lexus IS,  BMW 3 series, or some similar European sportscar 6 speed manual tranny into the car, I'd love to see it.  Just a bellhousing adapter away... short of making if fit, getting it to shift, stickshift placement, etc...

sounds like alot of work compared to a 2.3/SBF adapter plate and a T56 w/5.0 bell....

its already been done, many times over.

That's what I was gonna recommend.  Just don't forget to change out the speedo gear, I just put whatever D&D gave me, and almost got a speeding ticket because of it. 90mph in a 70mph isn't a bright idea. :D
