I am looking at getting the MM front coil over kit with their sport struts. Would my car handle weird with coil overs just in the front? They dont make the bracket yet to along rear coil overs to work.

Get the Griggs front coil over kit.  Much better in my opinion as I am running them on all four corners on both cars.  As for the rear, get a set of Chuck W's rear shock brackets and then you can run Mustang length rear shocks and utilize rear coil overs for a Mustang as well.

I have AJE coil-overs up front and SN95 springs out back. No funny handling. In fact handling is great.

Aerocoupe, Do you run Chuck W's brackets with the griggs coil over in the rear? or is it needed?

Yes and they are absolutely needed if you are going to run Fox/SN95 Mustang length shocks.

I've got maximum motorsports coilovers and DA konis all the way around.  Handling is GREAT.  I would imagine it would handle fine with coilovers just in the front too if you have a good springrate in the rear too.
