Title: turbo bolts?

What grade bolt/stud should i get to hold on the turbo elbow?

They're metric, so a class 8.8 or 10.9 is probably all you'll find. I've used class 8.8 with no issues.

What about a gasket for an external 5 bolt elbow? I cant find any...

You shouldn't need one. The  on that elbow whould be FLAT, as should the one on the turbine housing. Put it together without a gasket and test it before you go and buy a gasket.
