Has anyone done a straight conversion from the digital dash to mechanical gauges? and if so what is involved?

It can be done , the plugs on the back are different between the 2 setups so some re-pinning of wires has to be done and the anolog has only one plug where the full digital has two so one plug gets tucked away and is not used .
An EVTM is invaluable for doing this sort of modification :D

After doing my dash swap and trying different gauge clusters, I have the compulsion to say piece of cake.... Actually installing and wiring my 95 Mustang dash cluster into the Tbird was the easiest mod and most gratifying mod I have done. Tbird digital to buttstuffog is even more of a piece of cake!
