can i run 275/60/15 with 26" tires?

This is just me but typically you don't want to run more than a 245 or 255 on a 8" wide rim.  A 9" wide rim would flatten the center of the 275 out and give you more of a contact patch.

I have 17x10's,and they are wide.But those look huge.Maybe I'm just used to mine being on the car.I like those a lot.Gives the car a sinister look.

I ran 275/60/15's on my truck for a couple years on 15x8's and then I put 28/12.5/15 et streets on em.  Now I have the same tire on 15x10's and it actually hooks alot better but you should be fine with the 275's on 8" rims

Those steam roller meats do look good on the back of your car.  Did you have to install mini tubs, or were you able to just remove your quads and do a little clearancing?  I LOVE it!

i just got the right backspacing for the 15x10's which is 6.5 and they fit perfect. no mini tubs required. you can keep your quads on if you have them.
