I want to wire some additional 12V electronics.  Where's a good place on the factory harness to tap into enough power to run the equivalent of 4-6 headrest LCD monitors?

Nobody?

What I'm looking for is a KOER source in the trunk or rear seat area.  Any suggestions, or is that all in the dash?

you will probably have to find a source in your fuse box and run your own wiring to your desired place.  make sure to use a big enough wire to handle the load.
